For me, it is the Egyptians. The reasons, simply put are as follows:
Architecture, religious system, society, and administration. I could elaborate on all of those, but that is it in a nutshell.

Nubia, because they're like egypt but cooler.

Or the Maya, for too many reasons to list.

And yet they were defeated by the Egyptians! Kidding, you are right, the Nubians were also facinating and they influenced Egypt's development.

Their Pyramids are like 5000 times cooler than egyptian ones (though those are awesome too).

As far as I know the Egyptian civilization is older than the Nubian. The earliest Egyptian pyramid (that of 3rd Dynasty Pharaoh Djoser) dates from prior to 2600 BC while the Nubian pyramids are from 2,000 years later or more. While early Nubian culture dates back to before their pyramid building days, in general the Nubians were more influenced by Egypt than the other way around. While Egypt usually was dominant militarily and culturally, the Nubians did conquer Egypt and founded the 25th Dynasty in its later history (well after the fall of the New Kingdom). The stonework on the Nubian pyramids is quite good and the slope is much steeper. The Nubians built almost twice as many pyramids as the Egyptians but none approached the size of the three pyramids at Giza. See what having a subscription to National Geographic does? Egyptians and indians are both very fascinating civilisations. the incas for example would build gigantic 'gardens' alongside the mountains, all the way from ground level to 15000 ft. both the mayans and the egyptians built pyramids, which is by far my favourite type of building.

I don't have a favorite culture- all of them are exciting and have a deep history.

There are a ton of them. I think that the Greeks, Romans and Egyptians are quite interesting but everyone knows about them. The South American and Central American cultures are interesting too but my favorite is the Norse culture.

Well, there are many fascinating cultures all over the world, still I am most impressed by Polynesian and Norse cultures. I think it's quite interesting how the Polynesian cultures have spread over such a large area.
What is fascinating about the Norse cultures are not just their myths, but also their craftsmanship, especially in boatbuilding.
