68 studs is a good lenght, it's about the same as my costum hull (with has the overhanging part already btw, haven't taken pics yet).
I made my costum hull starting with one side (starboard side in my case)
I tried several combinations of slope bricks untill I had a good shape.
as you can see in the pictures the offset is very small, smaller than 1/2 studs. I accomplished that by using different SNOT parts (brackets and bricks with studs on the side).
Because the sides are SNOT it's probably better to speak about plates instead of studs, the minimum offset is 1/2 plate (=1/5 stud) but it get bigger near the prow and stern.
When I completed one side I determined the bottoms (and alterered the temporarely bottom I used to build that side on)
Guessing from the plan is pretty much what I did

By brackets and such do you mean pieces like this?

nope the grim reaper is all nice and done, im working on a ship with auto-slideing cannons,
and im makeing huge progress, i only need some parts i just did order,

unfortunately, theres alot of things i wanna make atm, but you know, the more projects you have, the less will be finished,
so im really trying to concentrate at one project at the time,
and ive also tried to sort some of my many bricks, so that they are easier to find,
tha will be a very long project to finish, hehe, and BTW, good luck with the pearl, when im ready to bild it sometime in the future, i will do it aswell,

Both of them yes, the first are particulary usefull in the center sections while the second brackets are more usefull near the prow.
at the prow you will also need headlight bricks because the sloping will be very close to the keel.

I think the pearl does have a waterline. It is slightly lighter than the rest of the ship and sticks out a bit. I noticed it while watching "At World's End" in the scene in Davy Jones' locker. I'll check out the scene were the pearl is grounded in "Dead Man's Chest" just to make sure.

Maybe it's a natural waterline, formed by floatin in calm water for a long time, the border between air-exposed/unexposed hull ?
It doesn't matter much for the Pearl anyway, the hull is completely black, upper part and submerged part alike

ive got some good news 1 i did make the automatic cannon AND port system , my "should work in theori" did actualy work in reality =) it dosent look pretty yet, but it inventualy will,
and i did order a new camera yesterday, so now i can garantie that my ships are posted latest friday, and now i dont have any excuses anymore not to post my stuff, hehe.

Oh but those are no waterlines, a waterline (only one) is perfectly horizontally, those two curved ribs of the pearl are something else.
This is just a guess but they could be there to protect the rest of the hull from damage when lying at a pier (and the ship slides against it).
I see the upper rib is at about the same height as the cannon deck is supposed to be so it could be some sort of extra reinforcement though might not make sense.

Anyway, as for building that it probably won't be easy, especially at the bow. maybe use headlight bricks with tiles or simply use a different color like that one builder did, good luck either way ;)

So, I just realized I have a pretty major problem, since I am having an interior to the hold/brig level of the BP, how and where will I put the car hinges the make Greenhair's slanted walls? Becaue the entire interior will be decorated...

That is the art :D
the art is to make constructions that are both decoration and functional.
I made the brig hold part of the hull for example.
In my design it is needed to hold the sides of the hull together because I build the rest of the ship on the sides.
Another possibility would be to make a deck hold the hinges (instead of the "walls") so to access the hold interior you'll be taking off the entire upperpart of the ship.
I'll be taking pictures of my hold interior soon ;)

Do you guys think I should make the decks of my pearl black, brown, or dark brown? In the movies they look like a dark drown/weathered black look. Also, should the decks in the brig and gun deck be black because they aren't exposed to as much weathering, or would that look kind of weird. The main issue is I want to be as accurate as possible, but at the same time I don't want it to be a big black blob.

A big issue of the Black Pearl, I even used dark tan on my Kraken attack cross section (http://www.mocpages.com/moc.php/280441)
I think the Pearl is generally more gray than brown but the available lego gray shades don't fit the pearl too well so brown might be a good option.
Still, I've seen the use of (regular) brown for the decks and I wasn't very font of it. Dark brown could work but that's not an easy color to come by, it would be very nice nevertheless.
I made all decks black in my ship but I'm using other colors for everything else as much as I can.
The main reasons I used black was because the hold is already partially black on the inside already (the slope bricks) and also my grate plates (8x8) are black. I'll take new pictures of my progress so you can decide for yourself how it looks.
My previous BP version really was a big black blob :P
Btw, I've uploaded an LDD file to my brickshelf (http://www.brickshelf.com/cgi-bin/gallery.cgi?f=503033)
It holds the construction of my brig, incase you're interested ;)

Thanks! I'm going to go with dark brown, it will be rather costly but it is worth it. The LDD file isn't working, I'd just upload it to your post of your JRC III entry on mocpages when you upload it.

I provided building instructions at the end of the page, it's a relative small ship but it might help you to start a costum bow.
generally the bow is the most difficult part of a costum hull.

So, if you look at my WIP pictures, you notice the the tumblehome is way too low, does anyone have any ideas on ways to make the sides curve more and raise the tumblehome? I'm less worried about the round tumblehome and more worried about it looking too flat. That was sort of a contradiction, though.

Your tumblehome is too low...or your keel is too high :p
It's seems very difficult to define a sollution for the current state of your WIP.
In my hull I used more slopes but that also means the ship is wider and you may not want that.
I must admit I find this difficult :S

In reply to the piano thing: Yes and no, I play any keyboard instrument. I tend to play things like xylophones and marimbas more than actual piano. I do this because percussion is my main instrument. I have a electric piano, a drum set, and various other concert percussion instruments. As I said on my homepage, I also do play in a marching band. Anyways, back to the piano part, I got a bit distracted there :P I play mostly one handed songs on piano, I'm not that good at playing the bass part with the normal part. Basically, I am better on keyboard percussion than actual piano.
